does anyone have any fave dipping sauces? or homemade concoctions?
i recently discovered that a little bit of Aloha Shoyu (excellent soy sauce) mixed with some real maple syrup (maybe a 1:3 ratio) and a good sprinkling of nanami togarashi (japanese chili pepper seasoning) makes a DELICIOUS sauce ... very candy-like...

I made a red oil sauce for wontons that went something like this:
for 1 person (I made 18 individual sauces.. instead of 1 big.. don't know why)
2 Tbsp chicken stock
1 tsp chili & sichuan pepper oil with sediment
1 clove garlic crushed roughly
4 shots light soy
3/4 tsp sugar (brown I think)
and a shot or vinaigre -

hollandaisse sauce makes me cry in pleasure....especially over warm pan fried artichoke hearts.
won ton dipping sauce is yummy too. -
